This Gluten Free Recipe Is One Of My Favorite Things To Keep Hanging Out In The Fridge!
When I first went gluten free I remember thinking “What the heck am I going to eat now?” But the truth is eating gluten free hasn’t been as hard as I thought it would be! There are so many healthy choices and alternatives out there that ANYONE can go gluten free and not look back.
Once in while I like to share a favorite recipe or two with all of you to help you on your journey and give you some new ideas to add to your list of YUM-O gluten free recipes! Here’s one of my staples and it’s really easy to make. You can all thank my Mom for showing me this great recipe!
4/5 Bell Peppers – variety of colors
2 Tbs Sesame Oil
2 Tbs – Rice Vinegar
1 Red or Purple Onion
1/4 Cup Dried Parsley Flakes
Feta Cheese to Garnish
Thinly slice Peppers and Onions. Mix all but Feta together and let set for about 3 hours in the fridge. Then enjoy top with Feta (optional) and I like a little ground pepper on mine too. It will stay good in the fridge for a couple days! YUM-O!
