I know, I know your probably thinking WAIT! Cheesecake isn’t healthy! And, you would be right. It is true you will want to have your Fat Fighter handy on this one. Let’s face it though, there are those special occasions when you want to make a pie or a cake for your family.
In my family, there’s more than one that needs to be on a gluten free diet, myself included. At first I was anxious and had no idea how to eat gluten free but if you look, you can find alternatives to your favorite foods.
To be honest, I think a lot of the gluten free recipes I make are BETTER than the original.
so heres my latest YUMMY, creamy, oh so good cheesecake!
Gluten Free Snickers Cheesecake
2 Cups Pecans
1/4 Cup Brown Sugar
!/4 tsp Cinnamon
2 tbs softened Butter
Place the pecans, brown sugar, and cinnamon in a food processor and grind together until pecans are finely chopped (if you don’t have a food processor you can this by hand, it will just take you longer) Then add in butter and mix evenly. Press into your pie plate and THERE you have it gluten free crust!
2 80z pkgs of Cream Cheese
1 can 14oz Sweetened Condensed Milk
Juice from 1 lemon (about 1/4 Cup)
1 HEAPING Tbsp Sour Cream
2 full size Snickers Candy Bars cut into small pieces (Keep them separate)
Beat cream cheese until it’s fluffy then add in the Condensed milk, egg and lemon juice one at a time, in that order, mix until it thickens a bit. Pour into gluten free pie crust and then drop one of the Snickers bars evenly over the cheesecake mixture and gently use a spoon to get the pieces to fall down into the cheesecake.
Bake at 300 for 4o minutes remove from oven and evenly spread the sour cream (stir it up real good first) over the top of the cheesecake. Then evenly place the remaining snickers bars on top and put back into the over for an additional 15 minutes. A tooth pick should come out clean when your gluten free cheesecake is done 😉
